Read More125ml | 1/2 cup ~ Fresh orange juice
125ml | 1/2 cup ~ Brown /Demerara sugar
125ml | 1/2 cup ~ Passion fruit /Granadilla pulp
7.5ml | 1/2 Tbsp ~ Fresh lemon juice
2.5ml | 1/2 Tsp ~ Vanilla essence
Small pinch of salt
Makes 360ml Cordial
Ice – Crushed
1 Orange – Cut into slices
360ml Prepared cordial
360ml Aperol
1. Place 6 martini glasses into the freezer.
1. Place ½ the orange juice along with the sugar into a saucepan.
2. Heat gently until sugar dissolves then remove from heat.
3. Add the remaining citrus cordial ingredients.
4. Gently stick blend or use a food processor to break apart the pulp.
5. Sieve and bottle cordial, discard pips.
Your cordial is now ready.
Cocktails
1. Grab 6 chilled glasses along with your orange slices.
2. Fill each glass with crushed ice. (Ice blocks beaten in a clean dish towel works well)
3. Pour in equal parts 1:1 Cordial to Aperol – 60mls of each.
Allow your drinks to rest for a minute before lightly swirling to combine.
Cordial keeps in the fridge up to 3 days otherwise frozen into ice lollies for the kids.
